In honour of National Margarita Day on February 22, we rounded up some of our favourite tropical-inspired drinks you can make at home! Shake up one of these tasty cocktails or mocktails, pop in a paper umbrella and dream of the day where you can enjoy one of these refreshing beverages by the beach again.

Classic Cuban Mojito
This traditional Cuban drink, which was created in Havana, is a perfect combination of sweet and minty. Enjoy it on a hot summer day at home or order it by the pool at Royalton Hicacos Resort and Spa.
What you’ll need:
- 5 fresh mint leaves
- 2 oz. white rum OR Sprite
- 1 tsp. sugar
- 1 oz. fresh lime juice
- Crushed ice
Recipe:
- Combine the mint, rum/Sprite, lime juice and sugar in a cocktail shaker and gently muddle the mint before adding ice and shaking for 15 seconds.
- Strain into a glass filled with fresh ice, top off with a splash of club soda and garnish with extra mint or lime!
Mexican Margarita
Margaritas taste best by the beach at Royalton Riviera Cancun Resort and Spa! When you can’t make it down to Mexico, bring a taste of the tropics to your kitchen with this easy-to-make recipe.
What you’ll need:
- 2 oz. tequila OR club soda
- 1 oz. triple sec OR orange juice
- 1 oz. fresh lime juice
- 1 tbsp. margarita salt
- Splash of simple syrup
Recipe:
- Rub the rim of a glass with lime and dip the rim of the glass into a small plate covered in margarita salt.
- Combine tequila/club soda, triple sec/orange juice, fresh lime juice and simple syrup in a cocktail shaker and shake for 20 seconds.
- Strain into the glass rimmed with margarita salt, garnish with a lime and take a sip! For a frozen option, add the mixture into a blender with ice and mix well.
Hemingway Daiquiri
This classic island cocktail originated in Cuba (and was one of Ernest Hemingway’s favourite indulgences) – but this version is a specialty from Royalton Antigua Resort and Spa! Can’t make it the tropics yet? Mix one up at home and pretend you’re staring out at Antigua’s breathtaking shores.
What you’ll need:
- 1 oz. rum OR fruit juice of your choice
- 2.5 oz. grapefruit juice
- Splash of fresh lime juice
- Splash of simple syrup
Recipe:
- Mix all the ingredients in a martini shaker with lots of ice and shake well for 15 seconds.
- Strain into a martini glass, garnish with a fresh lime wedge or a cherry and enjoy!
Blue Someday Soon
Bring a taste of the beach to your living room! This tropical-inspired drink tastes delicious and will have you dreaming of heading back to the beach.
What you’ll need:
- 1 oz. of Malibu rum OR Sprite
- ¼ oz. of Blue Curaçao liquor OR Blue Curaçao non-alcoholic syrup
- 1 oz. of gin (optional)
- 1 ½ oz. of lime juice
- Âľ oz. of syrup
- Sliced lime and mint to garnish
Recipe:
- Add all the ingredients into a shaker glass with ice cubes.
- Shake well until all the ingredients are mixed together.
- Pour into a hurricane glass, garnish with lime wedges and mint leaves, and enjoy!
